Beginner’s Guide to Making Kenyan Pilau

Kenyan pilau is one of the most beloved dishes along the Swahili Coast. It is fragrant, warm, and deeply spiced, built on layers of flavor created by toasting whole spices and simmering rice in a rich broth. Although it tastes complex, pilau is surprisingly beginner friendly once you understand the basics.

This guide walks you through a simple, authentic version that anyone can make at home.

Ingredients

2 cups Basmati rice (rinsed)
1 pound Beef or chicken (cut into small pieces)
3 cups Water or broth
2 Large onions (sliced)
3 cloves Garlic (minced)
1 piece Ginger (1 inch, minced)
2 Tomatoes (chopped)
2 tablespoons Pilau masala
1 teaspoon Whole cumin seeds
4 Whole cloves
4 Whole cardamom pods
1 stick Cinnamon
1 Potato (optional, cubed)
3 tablespoons Cooking oil
To taste Salt
Optional Fresh cilantro for garnish

Instructions

  • 1. Heat oil in a pot on medium heat. Add the sliced onions and cook until they turn deep golden brown. This step builds the signature pilau flavor.
  • 2. Add the garlic, ginger, and whole spices. Stir for 30 seconds until fragrant.
  • 3. Add the meat and cook until browned. Season lightly with salt.
  • 4. Add the chopped tomatoes and cook until they break down and form a thick base.
  • 5. Stir in the pilau masala and mix well so the spices coat the meat.
  • 6. Add the potatoes if using. Stir to combine.
  • 7. Pour in the water or broth and bring to a boil. Taste the broth and adjust salt.
  • 8. Add the rinsed rice. Stir once, then reduce heat to low.
  • 9. Cover the pot tightly and let the rice cook without stirring for 15 to 20 minutes.
  • 10. Once the liquid is absorbed, turn off the heat and let the pilau rest for 5 minutes.
  • 11. Fluff gently with a fork and garnish with fresh cilantro if desired.
  • 12. Serve hot with kachumbari, salad, or a simple side of vegetables.
